“Chocolate Cookies”

  Several weeks before Christmas, Sam’s teacher sent home a note asking for Sam’s favorite cookie recipe.  I think  this note may have come home on a day that I was working.  This means that the next morning, I probably tried to pick things up from the night before, but missed the recipe note completely.  Eventually, I found the note, put it in a spot that,” I wouldn’t forget,” and moved on to something else.  I continued to see the note every so often, usually after Sam had left for school, and remind myself to write down the recipe in question. 

   Finally one day Sam’s teacher called.  She wanted to put together a little recipe book of the students’ favorite recipes, time was running out, and she needed Sam’s.  She had tried to help me out by asking Sam at school about his favorite cookie.   “Chocolate,”  he said.  “Oh, you mean chocolate chip?”  she asked.  He shook his head no.  I thanked her for trying and promised to send her the recipe on his next school day.

  That weekend, whenever I thought of it, I asked Sam about his favorite cookie.  “Chocolate,” he said.  “Oh, you mean chocolate chip?”  I asked.  He shook his head no.  I really had no idea what he was talking about, as I really don’t make any other chocolate cookies.  Or so I thought.

  At some point during that weekend, one of the girls said, “Mom, you should make those no bake cookies again, they’re so good.  Ah-ha!  Light bulb.  Sam was talking about No- Bakes!  Together, on the phone, Mrs. Bazen and I combed through the old church cookbooks to find Chocolate No Bake Cookies.

  The recipe is from my cousin and it’s perfect for those times when there are no eggs left in the frig and no cookies in the jar for tomorrow’s lunches.  They whip up quickly and make about 2 1/2 dozen.  Here’s the recipe; of course they’re not as good as a fresh baked apple pie, but  tasty just the same!

Chocolate No Bake Cookies

2 cups of white sugar                                 1/2 cup milk

4 Tablespoons cocoa                                  1/2 cup peanut butter

1/2 teaspoon salt                                          1 teaspoon vanilla

1/2 cup margarine                                        3 cups oatmeal

  Mix in large saucepan sugar, cocoa, salt, margarine, and milk.  Bring to a full boil and boil for 1 minute.  Remove from heat and stir in vanilla and peanut butter.  Stir until peanut butter is melted.  Add oatmeal; mix well and drop by teaspoon on wax paper.  Cool completely and remove from paper.
